The following was taken from this weeks EVE University public mailing list which you join in game by signing up to ?Classes.E-UNI?.
The primary purpose of EVE University is to teach new (and old) players about the basics of life in EVE and various aspects of game play. To that end they hold regular classes, both theoretical and practical, in order to accomplish this goal. You can find more information on how to join their classes on their website. If you are unable to attend a live class due to time zone differences, you will also be able to find transcripts of their classes as well.
Please note that most of their classes are public! You do not need to be a member of EVE University to join!
This is a preliminary overview of University classes scheduled for the week of Monday, 24 October. All dates are subject to change at the discretion of the lecturer and/or teaching staff. All times are specified in EVE time. All classes are open to the public unless specified otherwise.

Monday, 24 October
21:00 - Tracking Disruption 101
Join Qvar Dar'Zanar for this class which will teach the basics to understand, use, counter and lead tracking disruption and their ships. Since it's an introductory class, it will focus on T1 ships.

Tuesday, 25 October
01:00 - Introduction to EVE University
This is a class for new Unistas, pilots looking to join E-Uni, or anyone curious about how the Uni runs. All are welcome. Braan Cadar instructs.

03:00 - [Q&A] Game Mechanics
Professor Seamus Donohue offers the first of his twice weekly Q&A Sessions on EVE Game Mechanics. If you've got EVE related questions, bring them along and he'll answer them for you.

Thursday, 27 October
15:00 - Survivability 100
This will be an informal class on increasing your survivability in EVE. This will not be a lecture, but a practical fleet and mumble discussion. We will be covering such topics as the pod-savers tab, bookmarking, undocking and docking, safe spots, what to do in a gate camp, etc. Everything we discuss will be practiced under simulated wartime conditions. Paragot Bezier will be your survival teacher.

22:00 - Capacitor Management 101
In EVE, your capacitor is life! If you run out of cap energy, your turrets don't fire, your active tank fails, your modules stop working and you soon end up stripped of your ship, floating in space in a pod. This class will explain how ship capacitors work, how you can improve their performance, and how you can become their master - instead of the other way around. Lotanis Arkturus teaches.

00:30 - Introduction to Incursions
Anducio Grandoli is going to talk about Incursions. Please visit the post on the forums and have a read of some of the wiki articles. There's lots to learn. Pickets for a Uni incursion fleet can earn some great early ISK to kick start their EVE wallets. Come along and learn about all of the roles.

The fitting window baffles you? You can't quite fit all the modules you need? You are not sure why ppl tell you to "meta down"? You don't see see a problem with fitting 5x Magnetic Stabilizers? Then this class is for you! Learn about the basics of ship fitting in EVE Online. Join Gyrgon to learn all about how to make it all fit.

For the second time this week, it's time to play "Stump the Prof". Bring your questions to this session about EVE Game Mechanics and let Professor Donohue answer them. It's office hours and the Professor is in!
